I became obsessed with matcha on a trip to LA a couple of years back, where I learnt that not only do I love the health benefits and gentle caffeine kick that matcha imparts, but I thoroughly enjoy the flavour of this potent powder. I knew I needed to incorporate it into my baking somehow, and the result is this beauty. The sour cherries compliment the sweet, subtly green cake, while the icing lends an element of pure creaminess which rounds each bite off into something none other than perfect.
