Our Dutch Spice Dark Chocolate Cookie Mix makes an amazing batch of cookies which are perfect with a cup of coffee, but you can also make them into these epic ice cream sandwiches!
All you need is one box of The Caker Dutch Spice Dark Chocolate Cookie mixes and one small circular tub of your favourite ice cream.
STEP 1 - MAKE YOUR DUTCH SPICE DARK CHOCOLATE COOKIE MIX AS PER THE INSTRUCTIONS ON YOUR RECIPE CARD
Your mix will come with two sachets - one sachet of spice cookie mix which is packed with beautiful Dutch speculaas spices like cinnamon, nutmeg, cardamom, cloves - and one sachet of the best dark chocolate pieces money can buy!
To make the cookies, all you need to do is add 180 grams of melted butter to your spice cookie mix and blend, before incorporating your dark chocolate pieces, and mixing until you have a lovely dough. Once your dough is ready, roll into balls and press with a fork on a lined baking tray, before baking for 15 minutes.
TIP - Make sure your butter is cooled before you add it!
STEP 2 - WITH A SHARP KNIFE, SLICE YOUR ICE CREAM WHILE IT IS STILL IN ITS CONTAINER
If you can find little tubs of ice cream which are in cardboard, that's the easiest way to make ice cream sandwiches - because all you need to do is slice the carton into rounds! Make sure you have a nice sharp knife, then simply slice into 2cm thick discs.
TIP - Vanilla or stracciatella ice cream work best with the Dutch Spice Cookies!
STEP 3 - PLACE COOKIES ON EITHER SIDE OF EACH ICE CREAM SLICE, AND TRIM TO SIZE
Check that your cookies are cool before forming your ice cream sandwiches. If your ice cream slices are a little big, just trim around your ice cream sandwiches with the sharp knife.
TIP - Crumble any leftover cookies over the remainder of the ice cream for an extra treat!
STEP 4 - EAT!
These are so good, you can usually eat them all before the ice cream starts to melt. Enjoy!
