Raspberry Cake with Cream and Jam

This cake may look old fashioned and English, but it's far from a boring Victorian sponge. It's actually a vanilla butter cake flavoured with lemon zest and dotted with juicy tart raspberries. The two layers are sandwiched together with a generous dollop of cream and raspberry compote, which is just cooked raspberries with a sprinkling of sugar. Serve a slice with a cup of English breakfast and you're all set for an afternoon tea party with the girls.
