I was recently commissioned to make this lavender and almond cake for my friend Natalie's birthday. It's the perfect cake for someone like her - delicate, sweet and a bit unique. I got the recipe off one of my favourite food blogs - Trotski & Ash, and decided not to adapt it in any way because it's already so perfect in it's simplicity.
It may not look super special, but the flavour of this cake is lovely. The hand made lavender syrup adds a dainty floral note which goes beautifully with the lemon zest. It's moist and soft like a frangipane cake and needs nothing more than a humble sprinkling of icing sugar to finish it off.
