I love making wedding cakes and this month I'm doing 10 of them. It's such an honour to be involved in someone's special day in this way. In the future I think I'd like to specialise in making wedding cakes; it's a real art form and I would do all sorts of crazy things. For now though, I choose to cater for non-traditional small weddings, and make 2 or 3 tiered cakes. I steer well clear of marzipan icing because nobody likes that anyway. My motto here is I want to make wedding cakes that taste incredible rather than looking inedible.
