The best vegan coconut cake

Today I made the most delicious smelling coconut cake which you would never guess was vegan. Not only is it reasonably healthy and low fat but it has a really lovely texture and flavour, despite containing no eggs or butter. The trick was to use this beautiful 100% pure coconut oil I bought - it's full of good fats and has a subtle coconuty character. I topped it with a vegan butter cream and some toasted coconut. I will definitely be making this cake again so feel free to order one.

organic soy milk
shredded coconut

icing:

non-hydrogenated vegetable margarine
organic vanilla extract
icing sugar
